Mix ratio

Our syrup is 4:1 ratio in a 2L bottle, so its easy to fill a 10L bowl. Always check the bottle of syrup, ignore the machines instructions if it differs from the bottle. Some come as 5:1, however, can be a little more difficult to measure and mix. Always use a good quality slushy syrup concentrate, a few extra dollars won’t add much to the cost per serve, but will enhance the customer experience.

  • Too much water
    • Consistency will be very icy and lack flavour
  • Too much syrup / alcohol
    • Consistency will be sloppy and looser, may taste too sweet
  • Not using slushy syrup as directed
  • Taste issue, consistency won’t be right and potential damage to gearboxes

Freezing Time

You should allow 3 hours including cycling time for compressor

Some machines will be quicker than others depending on compressor, age and gas

Avoid ambient above 28 degrees, direct sunlight (which can retard freezing and cause compressor thermal overload) and warm mix being added.

Adjusting Density

  • Manual
    • Sown density screw – open rear of Cab machine and show how it presses against gearbox and micro switch and explain torque of gearbox.
  • Digital
    • Show a digital display on X300, explain that reduction in temp should be done .1 degree at a time and allow 20 / 30 minutes between adjustments. Asses the consistency by pouring a cup.
  • Incorrect Density may cause splitting, where the water and syrup split, the syrup remains liquid and the water turns to an iceberg in the top of the bowl. The flavour and consistency will be terrible, the machine won’t flow properly when dispensing and you may cause damage to the gearbox.

When to refill

Best practice is don’t let the machine get empty, it will be hard to dispense and attract less purchasers that think they are getting the bottom of the barrel.

Top the machine up when its half full. It will be faster to re-freeze and more appealing to customers.

Storage containers for refilling / mixing

Show Blue bottles

Explain the ease of mixing in a blue container, then you can top up as you see fit. Keep the bottle in the fridge, not only will it speed re-freezing, but you’ll keep it food safe.

Preservative and shelf life

Our syrup is made with bacteria retardant preservatives that keep the sealed syrup safe for a shelf life of two years from manufacture date before the effective preservative has weakened. Once the bottle of syrup is opened, bacteria growth will begin, so keep an open bottle of syrup in the fridge and discard any opened bottles after 7 days.

  • Cold / Frozen
    • After mixing the mixed slushy syrup and water needs to be kept cool or frozen to slow bacteria growth and keep it food safe. Slushy mix kept at 5 degrees or below (including frozen) will be safe for 7 days and then should be discarded. Mixed syrup and water or open syrup bottles left in ambient temperature will develop bacteria quicker and should be discarded if left in ambient temperature.
  • Bacteria
    • Bacteria will grow very slowly at 5 degrees or below. Always consider the food safety of your clients and keep syrup and slushy mix below 5 degrees, at all times, to achieve a safe, bacteria free product. At the end of seven days, discard any left-over product.

Best practices for point of sale.

Keep your machine on freeze during business hours.

Use the cool function or overnight function on your machine after hours, not only will you save power, but the product will melt down and be ready to quickly refreeze the following day as it remains at 5 degrees or below (check your machines thermostat to check the overnight / cool function). It also will make certain that the product is consistent and properly mixed. Keep your machine full! Nothing more less appealing than a customer wanting to buy a refreshing slushy and thinking they are getting the bottom of the barrel, literally.
